I'm just going to quietly note the fact that a few Epicanthix characters actually still use fully white playbys despite the species canon appearance. Quietly. Casually.

It's not really an issue. Nor is it something we generally think about. There's nothing wrong with writing all white characters. As long as you're writing all white characters because you want to write them, and not because you don't want to write a black character. Which means that as far as I know no one on the site is directly doing anything wrong when in regards to race.
This isn't a 'YOU'RE DOING IT WRONG PEOPLE' issue. To me it's a 'hey, we have a lot of this, maybe we could have a little more of this as well?' sort of thing. IDK, just my opinion of things.

To recap: White people aren't bad. Neither are people of other colors. Or aliens. Writing diverse characters is fun when done right. Star Wars is diverse. Exploring that diversity is fun! Why just have white people when you can have red people, blue people, yellow people, black people, pink people, and giant talking lizards? LET'S HAVE ALL THE PEOPLE! Just write what you feel like writing. And in our lovely universe, that means pretty much anything! We can write all the people!

I wouldn't entirely recommend tumblr. Parts of it are great and parts of it are absolutely horrendous and awful. Some of it is fair, balanced, and very friendly while other parts are filled with actual super-racists, super-gay-haters, and super-women-haters (not just sexist people, but people who generally, with all of their hearts, hate women for just being women). Not to mention the weirder parts of the fandoms...

Nope. Though most of the epicanthix people I've seen change their playbys often. So sometimes it's fully white people, other times it's not fully white people, and sometimes it's people who match the species descriptions.
 
Writing between a man and woman is slightly easier for me since the social issues with both are near equivalent in the Star Wars universe, possibly even ancient compared to modern, western society based on the type of Star Wars culture since it's biological (difference in muscle mass, dealing with pregnancy and periods) and Star Wars does display typical gender roles of real life (and subverts them too). So, it's interesting to me to write either sex since I identity with one and can make interesting character traits with the other.

Differences in race is more cultural, and it seems that humanity is pretty tolerant of other human races by default in Star Wars. Alderaan is possibly the closest thing to having a majority group of similar non-white skin tone on a single planet, yet they apparently can accept a totally white princess from a non-white couple (or just assumed it was adultery, who knows?). Plus, we now have a black storm trooper and I sincerely doubt his race will bring new social commentary about the Star Wars universe (or maybe it will, who knows?). It's less interesting to me to write a character for the sake of being another race, since I'd feel like I'd be writing a white person with a non-white avatar and thus cannot build character ticks from that. If I saw a picture or playby that really interested me or gave me a good character idea, I'd probably roll with a non-white. This was probably exactly how John Boyega got the leading role - he just looked and acted like he would make the character come to life.

Non-humans are more interesting in that regard, then, yet I'm not one to make a bunch of characters and haven't gotten around to actively roleplaying one on Star Wars Chaos. I've at least tried several times before, though.
