I may be mistaken, but wasn't the reason Sith alchemy was considered dark sided because it altered the living, thus defying the force and nature?

Everything the Dark can do is mirrored by the Light.

Whilst the Dark side corrupts and taints, the Light strengthens and protects.

In this situation Alkahest would take a creature and as [member="Fatty"] says, aid its development. It could take a non-sentient or semi-sentient creature and make it more intelligent, or it could take a sentient creature and make it infused with the Light.
