Voice-to-text? I had never even considered such a tool. But then again; I am an old lady, ha ha!

Im right there with you, sometimes it comes flowing out, sometimes I've gotta let it stew. Some days I feel like writing more, some days I feel like writing less.

Cool question! So interesting seeing how different we all are 
I am SLOW with my replies and kinda always have been. I primarily post to Chaos on my phone, which makes the formatting take a while, and it also often takes me multiple short writing sessions to finish drafting a post in my notes app- often this means I take days to reply if my muse is being fickle. Chaos is almost always on my mind but rarely am I putting words on the screen.
Lately I have been trying to improve my process by shortening my post length down and writing it in one sitting if possible, which has definitely helped.
Still gonna phonepost though.

I used to use my built-in voice to text on my android but tbh its not consistent.
I have experimented with a couple programs. ChatGPT's voice to text is good. GPT's seems really clear and doesn't spaz out when i say big words or get really descriptive. I've also tested google's voice to text in Gdocs. You just goto tools and find "Voice typing" or if your on PC press ctrl+shft+S.
I use GPT when im on mobile and out and about and google's when im at my desktop. There are a bunch of other programs out there, I just stick to the free ones.
If you find one you like let me know! I will add as a disclaimer that its really different and might feel off. When I first started posting like this it felt strange to say it all aloud. Voice to text is so different from just listening to my inner dialogue and typing in silence.

Thank you for reminding me why the Star Wars Fandom (especially back in the old EU days) is the most upright and friendly Fandom out of them all! May the Force be with you, and if our characters ever cross paths, I hope I provide you with the best entertainment that my silly SFF-loving mind can possibly provide.Also, don't EVER become a type 2 diabetic and watch your sugar intake, as you don't want to live like this, is all I can say! I hope to keep at least one of my eyes.

And your quote of my reply to you just made me notice my typo, ha ha! I don't tend to proofread my OOC comments. I should correct that now!
But hind-sight is 20/20. I too have regrets about my past life choices that threatened my life. Yet these past few months hsve been a complete turn around and I am basically in a new life that is like a dream. It is wonderful to have the freedom of safety and not having to look over one's shoulder all of the time.
All that we can do is work with the changes that we've made to the best of our ability!

It only takes me an hour to come up with what I want to write for threads I consider to be generic. Think of your slice of life stories etc. The real interesting stuff can take me weeks, or most recently, months to figure out what I want to write. I wrote a post tonight (replying to a private thread) which took me an hour and a half to create but the story behind it took me from August up until the other day to figure out what I wanted to really write for the next few weeks.

Once I find time and energy it only takes like ten minutes. It’s just finding the energy to post.

Usually it depends how far the character or scene is from me. - An example on the hard and complicated end: if it's an amalgamation of two characters that were already disconnected from me, concepts I decided to try, who developed into their own characters, now in a second iteration after developing that out.
Also if I've got two characters that have overlap, I take time to try to add some mannerisms to separate them and things to show the similarities. Father/Son is a good example of this now.
If I just have an easy Kei post walking up to give someone a hug or guard down, original, oldschool kyle kataran vibe its incredibly easy to just write a simple, practical, calm Jedi. Where I am writing his darker arc, while keeping that alive can be more challenging. As I need both aspects of the character without overriding either one entirely.
The type of thread matters a heck of lot or how many people are replying. If its my first run at it, it'll be meh even with effort. If its a mega thread or has many people engaging with me, that can take an hour+ easy. But for an easy post, 30 minutes? I think that's fair. I think Kei - Natoline reunion was about 10 minutes, just old ground covered. - This is very rare.
Natoline (Glade) muse writes the initial post very fast now, but then I go back to add all her layers of detail (which is the point of her current character arc).

On average, nowadays it takes me around an hour to write a post. The worst part is certainly starting for me, since that's usually where I'm stuck staring at the screen with five or six different variations of a start, just staring me down at the bottom of the screen as I try and figure out how I actually want the post to begin. I do a lot of rewriting from a basic concept of a paragraph or even a sentence, to whatever becomes the finished work with more detail and description. I'm not sure whether it's just me being a little more judgmental as I grow older or something else, but posts certainly take longer than they used to.
I remember back when I was writing a clone trooper for another server, and would get 700-800 words out in what felt like ten to fifteen minutes. Now, I look back on that time, and I have no idea how I did that.
