If you want actual Star Wars canon how about the time the Mandalorians openly allied themselves with the GA during the Vong War or the time they aided the Coalition in its war with the One Sith? Or the time the Mandalorians openly joined the Rebellion in its war against the Empire? Or the time the leader of the Mandalorians joined Revan in destroying the Sith? The only times the Mandalorians have openly aided Sith factions were after their people were strong armed by the Empire and just prior to the Cold War between the Sith Empire and Republic of the Old Republic era.

If you want the full rationale you need to look at who The Mandalorian Empire is, it started as Death Watch. Death Watch wanted to return to crusades. We just raided two factions for gold and glory. The GE and FO just jumped into galactic news as wanting to shake spears it's only natural that a group that revels in war would want to test themselves against such obviously willing opponents.
