Jaina, Sword of the Jedi. Probably enough said. Twin Suns Commander, techie, pilot, you name it.
Anakin. What a waste--you're missed, we can tell the difference between a grandpa and a grandson with the same name! (The reason why they nixed Anakin Solo.)
Jacen, a cool story--I would lie if I didn't say I missed the dynamics of the Solo twins. One being a techie, the other being very involved with nature and animal kinship.
The Hapan story, Courtship of Princess Leia was a very good book.
Han Solo Trilogy! Bria Tharen was my favorite. I loved the back workings of Outer Rim Imperial outposts or stations. How they conveyed a krayt dragon pearl--had me thinking of how illustrious and grand it was. And how even an Imperial, nevermind they were high-ranking, can be bribed.
I think the EU New Jedi Order was good, how it was rebuilt from scratch over years--the whole purge had taken a toll on the Galaxy in that manner. There was the struggle to get it going--then Kyp and the Dark Jedi.
Dark Empire was awesome, the comics done by Dark Horse.
I could go on and on.
