The only thing that gives a saber crystal a purpose is the lightsaber and similar technology, as the plasma field is what the crystal gives its special properties to. Technically you could create a broad-sided plasma field along one side of a sledgehammer and use it that way, but it would only really be useful in "frozen blaster technology". (Lightsaber technology, if you're from post-Hyperspace War era.)

Mephite has base properties and is the most common crystal you will likely find with sabers.

Ilum crystals are the most common, pre-19 BBY, and are nearly identical to the generic Adegan crystals.

Ilum has adagen crystals and others on it. Most crystals in the galaxy when it comes to them being force attuned are adegan. The more rare crystals are only on some planets though Solari comes from a few.

Ilum Crystals

They are a completely different type of crystal, but are structurally similar in their crystalline makeup.
