POINTS OF INTEREST
Waiting Line
The waiting line, also known as the queue line, is where customers wait for tables to be available. Queue numbers will be given once the customers are acknowledged by the service staff stationed here. To ease the pain of queuing, customers will be given chairs to sit. Holopads are available upon request. Customers who prefer to use their own devices can also access the free holonet wifi to get online. For takeaway orders, one does not join this queue. Instead, the customer will just need to proceed to the payment counter to place his or her orders.
Payment Counter
All bills need to be paid before leaving the cantina. Bouncers are around to enforce this. Payment can be made in all forms of transactions, including credits, cards, holonet transfers and crypto currencies. The cantina manager will ensure that book keeping and account balancing are performed here dutifully by the staff at the end of each day.
Tables
All tables are made with high quality cast-plast to ensure ease of cleaning and durability. Chairs are available either in cast-plast or fax leather material. Orders are taken by the staff via the automatic food tracking system, which are sent into the kitchen.
Music Stage
Depending on the time of the day, live performances will be scheduled. Most of them are filled up by bands wanting to make their names, although a couple of them are truly famous enough to bring a crowd each time they perform. A stage is set to allow the bands to perform classic pieces or their own compositions. At times when there is no live music, customers who are willing to show off their singing talents may attempt to sing along with the cantina's own karaoke holo system. The list of songs available may differ in each location, based on their popularity.
Bar Counter
Some people prefer to sit along the counter. Why? A variety of reasons, but not important. Suffice to say, the bar counter is pretty popular, especially when a pretty bartender comes along at night. All bartenders are skilled in mixing drinks, thanks to the training provided by the company to teach them the necessary skillset. Drinks ranging from wines, beers, whiskeys and other hard liquors of various brands are available. All orders on the alcohol brands developed by the company are priced at a 10% discount rate to attract customers.
Kitchen
This is the soul of the cantina, where all the actions take place. And for good reasons, because chefs and cooks are engaged in a daily battle of busy cooking the customers' orders with multiple stoves. All orders are tracked and maintained via an automatic food tracking system. The chef of the kitchen oversees the overall cooking and kitchen processes, down to the dishwashing and cleanliness. He is also usually the kitchen expeditor and will shout out the orders from the food tracking system to the other cooks. Expect kitchen language such as "two cauli, two protein, one shoulder and one 1 kg", which translates into "two cauliflowers, two meats of the day, one roast shoulder bantha and one 1 kg fish". The chef has undergone the necessary training created by the legendary masterchef, Gardon Amsey. So make the him angry with slow or wrong orders and watch the tempers fly.
HISTORICAL INFORMATION
Soul Brothers & Sisters cantinas were originally opened by the owner when she was part of an underworld cartel, serving as a money laundering front and information gathering bases. After the cartel collapsed, the credits which had been laundered were kept secured in the banks until Mariya decided to use the funds to build a new company. The company was named as Soul Brothers & Sisters and established its footprints in the food and beverage industry. Making use of her prior experience, the cantinas are reopened with an appeal towards the mainstream public. For example, a proper queuing system is introduced and lights are bright during the day before dimming at night. All species are allowed in the cantinas, including droids, although it is generally not advisable to do so if there are Gamorreans around.
With the decision to allow drinks to be served, drunken customers may cause a scene. As such, bouncers are introduced into the cantinas to keep the rowdy customers in check. However, Mariya decided not to hire any Gamorreans, due to their persistent behaviour in destroying droids and machinery. Other than that, bouncers of all other species deemed reasonably intelligent and capable of thinking for the welfare of the customers are hired.
In additional to drinks at the bar counter, another iconic presence of a cantina is live music. Bands are allowed to apply for performance slots and will be paid accordingly in individual contracts. Established bands will generally take central stage during the busy weekends and ladies' nights.
