The main problem with making fine spirits is time. Products such as bourbon require a lengthy aging process in order to develop their unique flavor profile. In the past, efforts to speed up the aging process have resulted in inferior products that were little more than engine degreaser, and had a similarly unpleasant effect on the customer. If you wanted good product, you had to wait years or even decades.
Mr. V'S Quality Spirits has solved the aging problem with the power of science.
Once the freshly distilled spirits are placed into the industry standard charred oak barrels, they're placed in an aging chamber that strictly controls temperature, humidity, and atmospheric pressure. In normal aging, the changing of the seasons has a marked effect on the product. Changes in temperature and humidity control how well the product reacts with the charred oak, and how well it absorbs the desirable qualities, and also how the charcoal absorbs impurities within the spirit. The process is most active during the warmer months, while the cooler months allow it to rest.
To speed up the process, the atmospheric pressure within the aging chamber is lowered, and the passage of seasons is simulated more rapidly. The lower atmospheric pressure encourages the spirits to move about more freely within the wood of the barrel, thus speeding up the process, while the changes in temperature and humidity simulate the normal aging process, albeit at an accelerated rate.
The end result is a quality product in a fraction of the time. Mr. V's Barrel Aged Bourbon takes approximately a month to age, and then is allowed to rest for a month in the barrels before being bottled.
Our Barrel Aged bourbon hits the nose with a warm aroma dominated by rich caramels, with an undertone of vanilla and just a hint of oak. It has a full bodied flavor, sweet, but with notes of cinnamon and spice, with a slightly smoky finish that brings to mind warm cider around a campfire.
