I have a few in the outer rim who might end up being hunted.
Shavara
is one of the most likely under her identity as Sar Vun. (She wears a mask that further disguises her presence and shape-shifts). She avoids combat, but she is very strong in the force and is an excellent alchemist. There's probably a bounty on Sar Vun, dead or alive, and she's a known enemy of the Eternal Empire which I think is an ally of the Sith Empire. Shavara would need to be followed or predicted on where she was going, as she isn't super easy to track. You might have to hear word of her and go to the location before she leaves.
Salis is in the outer rim, though not sure why she'd be hunted. She's far more violent than Shavara, more experienced, and still powerful. She's more dark sided. She works for the Zweihander Union, and as a result also the Eternal Empire. If she were hunted she'd go somewhere incredibly open and just keep her fighter with her, because she welcomes violence.
Walker
is another character who could be found on the outer rim. He's not super interested in fighting himself but is fairly good at it. Like Shavara he's an alchemist. And has come to carrying around (sometimes) one of his devices that greatly increases his ability in the force. He tends to do things through proxies a lot though so he's not as easy to catch, but he still could be caught.
Gnoll
would also fit as someone to fight since he's a Jedi Knight. He'd try and resolve things peacefully, but he is trained to be able to fight. He might avoid the fight for awhile, but would eventually stand up. I imagine tracking a 14 foot tall tree with lightsabers isn't the hardest thing to do.
