So I've been thinking about doing this for a while, but never got around to it. I'm looking for a form of melee weapon that is underused, able to be modified to stand up to a saber (I will be attempting to acquire something for this soon), and either very simple to master or a sword variant. I don't know what's out there, but I'm hoping to make it a character point that Askrut's never caries a saber. Anyone have a suggestion?

My recommendation would be to learn Force Weapon and just beat people with a stick, Vodo-Siosk Bass style.
