Star Wars canon (including but not limited to movies) has many examples of dogfighting scenes. Granted, they are highly variable in quality (story-wise), but still they are a part of the SW lore, for better or for worse. From my limited experience of dogfighting, which sadly does not include PC-to-PC dogfights, here are my observations:
- Dogfighting tends to accrue less drama than conventional dueling or fleeting due to the playing field being much more even
- Dogfights have a few more parameters over duels, some of which are movement-related, but far less than fleeting (1 craft vs. multiple craft)
- Sometimes writers will take hits only to their shields
